And then the weather improves 🌤

But maybe not my breakfast. I decided to try baking apple bread, but I didn’t use enough salt and maybe oil and I ended up with a carb loaded mess that tasted like crap. Dipping in it maple syrup and salt helped but I still ended up cooking complete junk. It happens when you experiment, at least it’s whole wheat.

So yeah, breakfast was kind of a mess with the loaf I decided to cook. 🍞 Sometimes you just got to experiment I guess. Maybe it would have been better if I added some olive oil, stevia or salt. All those apples I thought would give it enough sweetness I really made a mistake leaving out all salt from the mix. 🤮 Kind of like dinner — I decided to make brown rice with chicken, with soy sauce but that meal needed some sugar to sweeten it up and MSG to tickle the uamani side of things. 🍚 I’m so used to cooking with loads of spices that when I first tasted that rice with no spices I was shocked how bland it was. And to think 🤔 that’s how I started my healthy eating journey.

Got the new bike 🚲 light 🔦 installed on my bicycle yesterday and it’s quite bright 🔆 from my initial before dawn testing this morning. I’m hoping if I get out today to camp I can do some night riding and see how great it really is. I love how it has USB charging built in and I can just plug in both the front and back lights for a charge while I’m home or at camp. No need to worry about batteries. 🔋

Lazy start to the day in the hammock while I chew over my plans for the day. Going to be a hot one especially at this campsite that’s fairly high elevation. I’m leaning towards kayaking 🛶 later on this afternoon but I’m not set in stone. Floating in the Jessup River would be fun too. Or Indian Lake. I’m just worried the lake will be choppy with that breeze.

Soaked red lentils 🥞 will try again with more water 💦 to make wraps rather than pancakes with the lentils. I’ve had trouble getting them thin enough after they cook but they are so delicious and rich in stomach filling protein. 😋 There not the kind of thing you’d want with a sweet meal but with salt in the batter they are remarkably tasty. Then chicken 🐔 with zucchini and lemon spice, garlic and onions should be so delicious. Since eating healthier my camp meals 🍴 taste so much better. Food really is the key to a good life. Been reading a lot of cookbooks and things on food science and I’m learning an awful lot of interesting things. Plus this time of year the farm markets are packed with good eats. 🍆 Tonight I plan to roast egg plant over the fire 🔥.

Last night watched the fire tower lighting in Spectulator and explored the US 66 village that was lit up after dark. 🗼 Tried to spot Snowy Mountain off NY 30 Tonight lit up – may have hard to tell with headlights and my eyes mostly on the road watching for deer. But Makotis lighting in Spectulator was fun, big crowd there. Jessup River Road has been recently patched, it’s not to bad either on the bicycle 🚲 or driving it even after dark.

Stayed up to midnight last night 🌕 under the moonlight which was not quite full but still very bright. By midnight things were covered with moonlight. 🎶 Some music and podcasts it was a nice relaxing evening 🌃.

That was the thought on my mind as I drove north to the Adirondacks to the usual campsite that I get here early on the Friday before Labor Day Weekend on Hardwood Hill to camp at. Being forty I’m much happier than ever before, some of its my diet, my professional success but I also just feel so much more confident in who I am even as I watch the world go further to shit. Absolutely beautiful day for sure.

Got up to camp ⛺ on Hardwood Hill, technically the hill next to it a little after ten and got the campsite I’ve been camping at each Labor Day Weekend 🇺🇸 since I think 2017 when I stopped here to overnight on my way to Moose River Plains and ended up deciding I really liked it and it was even more perfect 👌 once remote work became a thing. No remote work this time but I did enjoy a nice nap in the sun ☀ after setting up camp and having rice and squash for a late lunch. 😴 Then in the evening I rode down to Perkins Clearing and Jessup River, almost down to Sled Harbor – actually past the Miami River and also past campsite 9 to the swamp in the other direction. 🚲 Hardwood Hill is tough to bike up, I ended up just walking my bicycle up part of it.

Tonight will be mostly clear and moonlit 🌃, with a low of 45 degrees at 4am. 13 degrees below normal, which is similar to a typical night around October 4th. Southwest wind around 5 mph becoming calm in the evening. Always cool in the Adirondacks. Good night for sitting by the fire with the hoodie on. As I slept for a while this afternoon 😴 going to try to stay up late, though in my experience that’s easier said than done but the moonlight will help along with a good podcast. Thinking tomorrow of staying up late to see the lit up fire towers 🗼, maybe after watching the sunset 🌇 at Lake Pleasant and the celebration there, get ice cream 🍦then drive past Mason Lake to see Snowy Mountain lit up. Cooler than I expected 🍂 but then it’s September and I’m in the Adirondacks. I had thought about paddling Indian Lake or Lewey Lake and doing a night hike up Watch Hill to see Snowy Mountain lit up but that would be a very late night by the time I was back to camp. Those lakes might be choppy with the wind too. Maybe an evening in Spectulator would be better after an afternoon paddling the Sacandaga River down to the Kunjamunk 🛶 then a bike ride along NY 8 over to Lake Pleasant.

A nice morning for the walk 🚶. I have chickpeas cooking down on the stove this morning 🍲 in a second attempt to make hummus again this time with fully cooked down chickpeas, sufficient salt and olive oil and fresh lemon 🍋. This time hopefully it will be a nice smooth mixture. 🛻 Tomorrow at this time my hope is to be heading towards Tribes Hill for Samdil’s Farm to stock up 🌽 🍆 🍅 🥩 🥚 prior to the Adirondacks. ⛰️

Closing out summer what seems like much too soon 🌻 but it always seems to happen this way. I went out to Bender Mellon Preserve 🍈 after finishing off the last cantaloupe last night probably the last time after work until next spring due to the early sunset. Dark and shadowy now for the morning walk too as the sun rises later.

The red lentil wraps I made yesterday worked out good, 🍳 they were tasty with just the right amount of added sea salt. Again the key was soaking the lentils in advance all day so they were big and soft when they hit the food processor to make a good batter. 🥞 Ultimately they were delicious with the red kidney beans and maple syrup 🍁 for dinner though I’m sure if I had kept more water in mix they would have been excellent wraps. Might try again up at camp this weekend.

Glad I rode back and forth to work yesterday 🚲 as there was a car 🚙 🔥 fire on the Thruway and 787 was quite backed up plus I saved $2.70 for the day and got good exercise. Strong west wind coming out of the Norman’s Kill Gorge but I knocked it down and climbed slowly in lower gear ⚙. Going to do the same today.

Funny thing about all this warm weather coming up next week 😎 is I am already thinking a lot about the soups I can make up for cheap this winter, and are a bit disappointed that coming week isn’t going to be good soup weather. I was researching the use of canned broth and bouillon mixes and making my own stock for soup in coming months. 🍞 🍲 Bouillon is cheapest and easiest way to add flavor to soup and other meals, and broth is fine though it seems like a lot of packaging, and once you open it up, you kind of have to use it up quickly. Most bouillon is high in salt though, in part due to it’s use as a preservative, but also taste. The flipside is the salt in bouillon means you can leave it out of the rest of the soup, and soup can keep you going most of the day. Stock is a good way to go if I have time — a whole chicken isn’t that expensive and I think I have a big enough pot. I am thinking soup is a great way to make a lot of healthy meals cheaply, and would be so good with the simple, whole wheat bread like I made up earlier in the week.

I packed clothes and filled the water containers 🎒 in preparation for Labor Day Weekend and will finish packing this evening. I want to be to bed well before 9 PM, maybe 8:30 so I can get a very early start tomorrow, and be on the road before 7 AM if at al possible, so I can hit Spectulator by nine or so. Not because I’m planning on working 💤 but I want to get that Hardwood Hill Campsite if at all possible, and then have the hammock set up and be all set up by mid-day, after which I’ll go for a nice bike ride. 🚲 I was thinking on Saturday or Sunday when it’s warmer, one option would be to ride down to Jessup River to cool off in the creek, although I almost want to drive down just so I can bring the tube for floating and cooling off. 🏊‍♀️ Going to be hot come Labor Day, though not excessively hot up north — but it is September. Still with the sun, it could get pretty warm up on Hardwood Hill, should I get that campsite.

Well that pizza crust reminded me of inexpensive Walmart whole wheat sandwich bread that was a bit soggy 🍕

Well it was an experiment but probably rushing it, making it undercooked with the wetness from the thawed 3/4 lb of frozen spinach and pulverized tomatoes left it soggy. I’m not saying it was bad as I eat all up but needs refinement. On that note…

Some good bolts of lightening as I cooked breakfast with rain but then it stopped.  ⛈ The dew point is 66 degrees. The skies will clear around 11 am. Probably within a few hours I’ll need to drop the shades in my office so I can see my monitor. I don’t mind the sunlight, especially on a cooler day today.

I ended up deciding to ride to work after realizing I was too late to catch the early express downtown 🚵, as it wasn’t too wet this morning, after the storm pulled away and the radar showed all clear. But if we get rain this evening or it’s too hot, I can always throw Blackie back on bus and take it home — but it’s rather ride, burn the 500 calories and save my buck thirty. 🚌 I figure in most cases when it’s nicer out, it’s best to take Blackie at least one way, as before you know it there will be snow on the ground, I’ll have to dress up for work, or actually have a good excuse for not riding in. That said, I’m kind of looking forward to moving over to the new office in North Albany, as Erie Boulevard is a much easier, flatter ride then the Madison Street hill, past Hill Cafe. Plus none of the serious traffic like on Madison Avenue. Won’t get rid of the Normans Kill Gorge climb in the evening commute, but that’s part of the calorie burning exercise.

Got my 36 inch jeans on 👖 and they fit pretty darn nicely. I almost could have gotten 34s, but these will do for now, as who knows where things will be in a few months. With some of those nicely-fitting shirts I got from the Salvation Army, I look pretty sharp compared to the baggie jeans and oversized t-shirts I often wear, though I’m getting more fitting clothes, but most of that currently is just shorts and hand-me-down t-shirts from dad. 👕 I think now that I have better fitting clothes, it won’t look like I’ve lost an excessive amount of weight, and that will hush up the critics. Now the key is just keeping off the pounds, though I think I’ve learned enough about food and nutrition in recent months that I’m unlikely to go back to my old ways. Yet, it will be harder to ride to work when the snow flies ❄️ as eventually the rail trail will be impassible due to snow. Plus when I move to the Erie Boulevard office, I won’t have the 18 flights of stairs to climb or that hard climb up the Madison Street, not that I’ll necessarily miss the later especially with the traffic.

I think yesterday’s pizza would have been better, 🍕 had I baked the crust even further — more then 8 or 10 minutes before adding the spinach and sauce, and maybe boiled down the pulverized tomatoes 🍅 before applying them as sauce. I didn’t think the crust was a garlicly as I had hoped, and maybe I could have added more olive oil to the mix, though I didn’t want lard it up with too much saturated fat or calories. The loads of spinach were good, and the cottage cheese added flavor, and it was good to use up many of the tomatoes I had where starting to get soft and in some cases moldy in part of them. I think next time I’ll try preparing in advance with the addition of yeast, 🍞 maybe a little of Stevia for sweetness and maybe less oil. And make sure the crust is fully baked before adding toppings, and as then boil down the sauce in advance to make it thicker. Definitely felt full after this meal though, and I went for a five mile bike ride 🚴‍♀️ after eating, around the Nature Trail in the park, 🐸 then down Glenmont Road to the other part of Elm Avenue and back home before it was completely dark out at eight. 🌃

I put some red lentils to soak in the refrigerator today, 🍛 this evening I will drain, and try running them through the food processor again with some sea salt, for a second attempt at making red lentil wraps. I have generally avoided wraps as I think they’re extra calories and carbs for no reason, but I could see different things I could make up with them too. Somehow I don’t have turmeric in my pantry despite shopping at Farmer’s India Market on Saturday, but I should get some so I can make dhal up as it’s an healthy option. I need eggs, 🥚 I could get them with the Turmeric this afternoon commute, though I’m a bit hesitant to buy eggs and then ride home with the bumps, 🐣 as often it’s a bit rougher riding in the basket then in an an automobile. Plus if I wait until Friday I can get farm-fresh eggs at Samdil Farm, which I was surprised are only selling for $3 a dozen, probably because they mill their own chicken feed from farm-grown grain that is primarily for their dairy operation. 🐓 But then again, I don’t really need any more food, my refrigerator is full and I don’t want things to start going bad. Maybe next week when I back from camp I can try dhal.

Tonight I’m going to start packing for the Labor Day Weekend. 🏕 There is only so much I can do this soon but the more I have ready, the less to do tomorrow, and then I can get to bed early 🛌 and be up and on the road before seven come Friday. Then to Samdil Farm early, which is a bit out of the way but worth it, Johnstown Walmart for any other miscellaneous supplies and hopefully to that campsite I want by nine. 🎪

Then when I get up to camp, by mine, the plan is clear: 🎪 Set up the tent, then chill, as I have day off and I’m not remote working. 🚲 Spend the afternoon riding dirt and gravel, see how many bears 🐻 and wildlife I can see along the way. Cook up some shrimp, squash and other goodies, eat sweet corn. 🦐 🌽 Hammock time, and kayak and swim time, especially come Labor Day. No need to rush home on Labor Day, as I’m not visiting my parents this weekend though I want to be home by 8 PM so I’m not driving home in the dark. But that leaves a lot of day to poke around and have fun in the greater Speculator-area.

Listening to Rich Men North of Richmond as I’m out for the morning walk, living in the new world with and old soul. A big pot of brown rice, red and green lentils are cooking down for the week – already had my first cup of coffee and looking forward to cream of wheat with chia seeds, yogurt and frozen fruit.

Went to bed 🛏 early around 7:45 and I was asleep by eight. My left eye 👁️was very irritated as I forgot my contact solution when I went out to my parents house yesterday overnight and by afternoon it was a mess. Yesterday, I got a call from a friend who was a nurse 👩‍⚕️ in her younger years, concerned about all my recent weight loss. Apparently a lot of people have been talking about how much thinner I’ve gotten, concerned that I’m not eating enough. 📩 She sent me an article about the dangers of loosing weight too quickly, with fatty liver disease and other things that can happen if your crashing with your calorie intake. But truth be told, But the thing is when you don’t eat a lot of processed foods and eat a lot of fruits and vegetables, 🍏 it’s hard to eat excessively and keep pounds on. 🤰Trust me, I’m often very stuffed after eating and keep filling my mouth throughout the day with quality food. I don’t just eat 3 times a day, but non-stop from morning to night.

The heck of it is despite all my weight loss, I am eating more then ever and spending more on food. 💸  Some of it’s inflation but also I’ve been trying to expand my pantry and keeping healthy eating interesting, with new and different foods every week. At first I was very picky about what should be in my diet 🐠🔍 but now I focus more on overall, doing a lot more home cooking with quality ingredients and very little sugar, saturated fats, and a reasonable amount of carbs. And lots of fruits and vegetables, consistent with Harvard guidelines for such things. 🍽 That said, I am surprised how much I’ve lost even since May. The 36×32 jeans I bought this weekend which I was afraid would be too tight, where almost too loose, almost necessitating a drop to 34. Figuring a year ago was I was primarily wearing 40 inch jeans, and even at times some of them were a bit tight, I’ve become so much thinner and healthier. I think it’s doing the stairs at work and lately bicycling to work. It’s not the limiting the plate size for sure.

I did do that physical back in late May, 👩‍⚕️ I’ve thought about reaching out to my Health Insurance’s nurses line to see if they have any advice on my recent weight loss. I am not concerned as I think it’s just I”m burning more calories then I’m taking in ⚖ but folks still seem to be very concerned. I am hearing that from a lot of people. Maybe I should see if my insurance covers the visiting of a dietitian to help me better understand my food choices, and come up with a better balanced meals, though I think my food choices are basically the consensus of what most of the health experts are saying, 🥑 and I’m NOT under in-taking healthy fats or proteins — or have some kind of undiagnosed disease. It’s not just that one nurse friend either, it’s relatives, co-workers and others.

I have Labor Day Weekend Off 🏕 including the Friday before so I can go up to camp bright and early. I probably will do like I did two week ago — pack Thursday night — leave very early, maybe before seven, get gas in Rotterdam, ⛽ then stop at Samdil Farm for sweet corn and vegetables and maybe meat, 🌽 🥩 Walmart for supplies 🛒 and then try to make Speculator as close to 9 AM as possible to get the campsite I want and get set up. Then hang out for a bit, have lunch, then maybe mountain bike 🚵‍♀️ in the afternoon and do some fishing. 🎣 Maybe kayak Indian Lake on Saturday, if not to choppy. 🛶 Saturday evening I might do an after-dark hike up Watch Hill to spot fire towers lit for the firetower light-the-night event. 🏃 🔦 Later in the weekend, probably Sunday or Labor Day I’ll have to go back down to Spectulator for some swimming. 🏊. Should be a wonderful weekend, especially with some fresh-locally sourced steak and shrimp. And so much delicious sweet corn and other good things to eat.
