Carrot πŸ₯• pancakes πŸ₯ž are good way to start a morning

Last night it was Johnny Cakes with onions and spinach and a bunch of Ms Dash salt-free seasonings, this morning its carrot pancakes with cherries and maple syrup. Salt is bad news, I am trying to stay away from it more these days.

I do like my carrot pancakes πŸ₯ž. Carrots are healthy and relatively cheap. It’s hard to get enough fiber in your diet, especially in America these days. Carrots when cooked are slightly sweet and excellent filler as part of hardy but soft pancakes. πŸ₯• I grind oatmeal and then carrots in my food processor. Add one egg and milk. Add Baking powder. Add cinnamon, ginger and sometimes vanilla. πŸ˜‹ For sweetness I’ll sometimes add a whole orange, peel and all or a banana. Then a little bit of whole red wheat flour and some water to smooth out the mixture. Top with fruit, honey or real maple syrup. 🍯

The work never stops in the world of data. πŸ”’ I’m becoming such a pro with unix textutils – awk, sed, tr, grep and cut are my go to tools βš™.

Hump Day, and I’m out riding early 🚲

Slept in a bit later then I wanted this morning but I made good time this morning and was able to go for a 45 minute ride out Meads Lane and Orchard Drive. Cows were all lumped together, staying warm in the cold. My fingers felt a bit swollen and sore when I first got back indoors but the warm shower seemed to make things feel better again.

The morning bike ride at 6:45 AM wasn’t bad 🚲 though it was a bit cold at times, especially on my fingers. 🀚 I had gloves on which helped quite a bit, 🧀 but at times my fingers were cold. Riding up the hills on Orchard Avenue helped warm me up but I didn’t mind getting back home and taking that warm shower 🚿 before heading out to the bus. 🚌 It turns out the later express bus works out well for the transfer to the shuttle to the suburban office, making for a commute not much longer then driving, plus it saves money and I don’t have to worry about bumping other cars, and watch videos or do other things while I ride the bus. That said, I look forward to riding to work again, but right now the rail trail is snow covered ❄️ not to mention it’s a pretty cold week.

Yesterday with the snow was kind of a messy commute ❄️ and I was annoyed that I got on the local bus and saw shortly thereafter the very late express bus passing by. 🚌 I just didn’t trust the real time bus info, as it kept shift as the express bus and local bus kept getting later. This month though with the recent cold blast 🌬 it must certainly will be back up. Trying to limit my power use too by cooking efficiently with a full oven each time I cook. πŸ‘©‍🍳

Today was a great day up on Canaan Mountain β›°

Morning started out cold and so was the evening but tons of sunshine by midday and beautiful deep blue skies with temperatures in the low sixties by afternoon.

Good evening! Clear and 45 degrees in Canaan Heights, WV. Calm wind. The skies are full of stars. ✨

It was a nice day though it started out cold ❄ with a hard frost. As the previous night it was cold and I got here late, spent the morning pitching the tent and setting up camp for the week, gathered firewood πŸ”₯ , then a nice lunch of salmon 🐠 , broccoli πŸ₯¦ and onions. πŸ§… Dinner was rice and lentils with too much garlic and some beer. But I enjoyed most of all was the many cups of coffee β˜• β˜• β˜• and eggs and vegetables. 🍳 I mean the hard boiled eggs and banana 🍌 limited piss breaks on the way down but I was all for having a real breakfast this morning.

I spent a lot of time getting camp set up for the week, β›Ί organizing gear and food. Laid back in the hammock for a while. It’s vacation, and this year I’m determined not to spend every waking hour rushing from point A to Point B. It’s not like I’m planning fewer adventures but I’m trying to explore more what is close to camp but have previously overlooked then the crowded tourist trap kind of places like Spruce Knob, Dolly Sods and Seneca Rocks. I’ve been to all those places many times before, no reason to go back. Truth is though I kind of want to go back to the Dolly Sods 🌾🌲🌳 but I don’t like the crowds or the rough steep road up there and it’s a bit out of the way. I guess I’ll decide later in the week.

Did a leisurely bike 🚲 ride along a portion of upper Canaan Loop Road and then hiked down to Blackwater Falls State Park 🏞 spending some time at the scenic overlooks before hiking back through the mountain and giant laurel lined trail. With the giant laurel so tightly growing in Canaan Heights there wasn’t much of a chance of loosing the trail.

Tonight will be mostly clear πŸŒƒ, with a low of 30 degrees at 5am. South wind 5 to 7 mph. Colder then Albany but also tomorrow will be warmer than back home. Lots of sun too. Well offically at least, though in a few hours it will really feel like it with the muggers returning, assaulting you as soon as you step outside of a non air conditioned building. And I’ll be like I’m morally superior for not having air conditioning at home while working in an air conditioned office all day and taking my big jacked up well air conditioned truck to the Adirondacks I camp every time it gets truly hot out.

Feeling good this morning as I got to bed πŸ› by 8 pm last night. It feels werid going to bed with the sun still being up but lately I’ve been getting deprived of sleep as I’m often up at the five o’clock hour and many nights I’m up pushing ten o’clock as it’s not real dark until 9 pm and I’m out walking 🚢.

Oatmeal πŸ₯£ this morning with fruit but I’ll also add a spoonful πŸ₯„ of Greek yogurt and some white beans to boost fiber and protein levels to avoid the blood sugar crash mid morning and the cravings to eat more food. Plus I’m trying to use up the white beans so I can cook up the red kidney beans over the weekend as they are so good with a little bit of maple syrup or mashed and cooked with eggs. πŸ₯š

Got a co-payment bill for my blood πŸ†Ž work after my physical a few weeks back. I guess I expected that $25 fee but it’s just a reminder that your free yearly health screening isn’t just that. So much of the medical industry is rather scammy, they don’t tell you much as they assault you with paperwork. Being able to study the online health records though is nice. πŸ”Ž All my numbers are very good, especially sodium levels, cholesterol LDL to HDL though some might be I’m still relatively young, eat a pfairly good diet and have lost quire a bit of weight. πŸ‹οΈ Blood sugar was in the normal range but slightly elevated as I eat breakfast before the blood draw. White blood cells was a bit low but it might have been the sample due to delay noted in processing but the actual infection fighting components were good. Honestly at this point my goal πŸ₯… is to avoid doctors πŸ§‘β€βš•οΈπŸ₯ as much as possible.

Also I need some more under shirts as I’m pretty much out of clean ones and I would like to have XL sized ones that fit better.

Made it to the May camping trip, the first quote unquote summer camping season. The black flies are swarming but as far as I can tell they aren’t biting. I’m glad I’m not getting eaten alive in the Adirondacks and truth be told it’s a lot quieter than camping on NY 8 East Branch Sacandaga River with all the road traffic.

Kind of a chilly start to the weekend, especially with the wind. Mostly sunny and 47 degrees at the Burnt-Rossman State Forest. There is a northwest breeze at 6 mph. πŸƒ.

I kind of played hookie and snuck out of work at 1 pm on Friday, that is with the big directors permission, β›Ί I wanted to get up to camp early so I could ensure I could get the Duck Pond campsite which sometimes is taken, and then have time to do some hiking before dark. Plus I had the time I would otherwise loose come next Wednesday so I made the leap.

I managed to forget my day pack πŸŽ’ at home. I realized it yesterday when I was in Middleburgh. What to use for hiking to have food and carrying water? πŸ’¦ I figured out a chair bag would work for that slung over my shoulder. It looks a bit odd but works okay. I think I need to update my packing list – things have changed but my packing list hasn’t kept up with the changes. πŸ“ƒ

Black flies are out and swarming 🐜 but they aren’t biting. If it’s anything like yesterday, get into the darker parts of the woods away from water or come dusk they’ll be gone. I’m sure it would be worse in the Adirondacks.

But regardless it’s a nice morning. πŸŒ… I woke up at six o’clock like usual but decided after peeing to get some more sleep. Then it was coffee β˜• and oatmeal – banana pancake πŸ₯ž mix topped with blueberries. Going to read πŸ“– and listen to a podcast until around 10:30 then start a road hike, heading back to the woods 🌲🌳 after spring turkey πŸ¦ƒ closes at noontime. I want to check out the Rossman Hill Leanto and Looking Glass Pond 🎣 and then maybe head down to Panther Hollow along the Long Path.

Hsd a loose connection on the inverter last night πŸ”‹ which kept it tripping out due to under voltage. Tightened it up and now it seems great. After all these years I’m really figuring out the system working out all the bugs. πŸ› That said, I’m already considering what I might do different on a future truck. πŸ›» I was thinking about how much I miss having the little truck for navigating the back roads – I’m always careful about where I take Big Red as he’s tough to navigate on the narrow roads and sways a lot on the rough roads which I don’t want to break my big expensive truck on.

Next time I might bring more beer 🍻 and I might get a small package of cookies. πŸͺ I’m really trying to improve my diet but I think I can make exceptions in moderation especially if I’m planning a high activity day. 🦡That said in general I’m not going back on my now healthier and often more delicious eating habits.

Tonight will be mostly clear πŸŒƒ, with a low of 39 degrees at 5am. Six degrees below normal, which is similar to a typical night around April 21st. Southwest wind 3 to 7 mph. In 2022, we had mostly clear skies in the evening, which became partly cloudy by the early hours of the morning. It got down to 45 degrees. The record low of 29 occurred back in 1874.

Last night I did a nice hike πŸ‘£ down into Cole Hollow along the Long Path. Strangely enough I had never done much hiking down there. That Cole Hollow campsite β›Ί is pretty nice, I should keep it in mind especially if I’m going to Mine Kill Pool or planning to bicycle 🚲 ride in the Schoharie Valley. I feel like I could potentially ride right from there as the elevation is relatively low. Deep hollow though, no cell service or likely much radio service. Kind of like Betty Brook.

Too bad it was so cloudy yesterday night for the full πŸŒ• moon. It cleared out late but not until very late when I was in bed for the night. Maybe I can enjoy the moonlight tonight. I do enjoy how much quieter it is up here compared to what it would be on NY 8. Plus far less black flies, or maybe not they were really swarming last night when the sun was still up. It’s May everywhere.

Trying to upload some pictures this morning πŸ“Έ but the internet up here is a bit temperamental though at least I now have a card reader that allows me to upload photos taken by my good camera on the phone. πŸ“± But even that is a bit tricky as my phone doesn’t like the uppercase JPG extensions which force me to rename the files πŸ“‚ before I can even preview them on my phone.
