Frozen Switzkill

While the snow and ice is long gone in the city, in the bitter coldness of the hilltowns this weekend not only could you find frozen creeks, many of the lakes where frozen over including Tompkins Lake. I didn't spend much time walking the Switzkill as there was a hunter up in a tree stand and I didn't want to bother them and it was bitterly cold and had more back roads to explore in my property search.

At least that’s what the internet tells me to be the case. And unlike me, the internet doesn’t just make up shit.

Good morning! Happy Snowman β˜ƒ Day. 15 degrees and partly cloudy this morning as I await the dawn 6:50 πŸŒ… and head out for a morning bike ride. Roughly three inches of snow on the ground β˜ƒ, which could probably be turned into a snowman that will last until Monday at 2 pm, the next time it’s likely to be above freezing again.

Last night I was bed πŸ› by 7 pm and asleep shortly thereafter as with the nights so cold and dark I can’t imagine staying up much later. I mean I probably should have gone for an evening walk 🚢 but I was tired. Cooked up some of mom’s lasagna with Butternut squash and the last of the frozen peas and corn I had. Salmon and broccoli πŸ₯¦ 🐟 for dinner tonight.

Pancakes πŸ₯ž this morning with the remaining fresh blueberries 🫐 and mango that I had. Getting low on fresh fruit but with the snow coming tomorrow I’ll probably wait until Saturday morning to shop. πŸ›’ Even the veggies are almost out but I have several cans πŸ₯« of low sodium vegetables I got for camping that I can crack open. I’ll stock up on several large bags when I go Wally World. Bulk frozen vegetables is something I really like. Plus no cans to wash and recycle β™». The plastic makes a good fire πŸ”₯ starter, lol. πŸ˜‚

I prefer the calorie burn of riding but lately I’ve been riding back along Cherry Avenue at 7:30 am and it’s really congested. 🚢 I guess I could have done a walk in Delmar instead this morning but the Concourse will be warm.

When the weather gets nicer out, I’ll be riding to work, that is once the bike path is free of snow 🚲 and can visit the Corning Preserve at lunch time or explore the bike trail, especially the nicer section near Menands. 🏞 Might be nice to sit down by the river and eat lunch and ride. It’s a big change to working out in the suburbs, but it really isn’t that bad but I do miss the sweeping views from the old downtown office, and just the experience, but I’m young and can adapt.

I have been trying to dial back the calories and big meals this week, 🀰 as I haven’t been riding into work with the weather, and don’t have the stairs to climb in the suburban office building. There are some halls to make laps, but nothing like being connected with Capitol Complex and Concourse. It’s just been cold and icy, and it’s hard to get in as many steps as I would like to do each day. πŸ‘£ Plus I’ve been having a lot of carbs lately with all the bread I’ve been baking 🍞. Of course now the challenge is with the pantry getting low, but as noting before, if I dip into the canned vegetable reserve I have I should be able to make it to Saturday.

Then when we finally reach Friday, ☺ we will have snow 🌨️ mainly between 8am and 5pm. Cloudy and cool, with a high near 26, which is six degrees below normal. North wind 6 to 11 mph. Figured if it’s a dress-up day for work, I won’t be able to ride to work or want to take the stairs up to my office. So it best to get out riding early. It looks like the main roads will just be wet, not super icy though I might run into some snow on side-streets, like Meads Road and Orchard Street. I don’t expect it will be that bad of a ride this morning, and it’s not super cold. But first the sun needs to rise a bit more. I have lights on my bike but I don’t want to ride in the pitch black, especially past the street lights on NY 32 and Meads Road.

This morning I made cornmeal paddies with an egg, milk, red onions, garlic, spinach, red pepper and salt. πŸ” I think with the garlic, salt and red pepper I might next time dial back it back a bit, as they were a bit more punchy then I’d like in the morning, but they were good. The spinach helped boost the fiber content plus topping them with greek yogurt and the egg in them really boost the protein content. I was pretty happy with how they came out, and will make them again though I still think I’d want to tone them back a bit. Just too spicy for morning food. Is corn as healthy as oats or whole-wheat? Probably not, but it has the different sweeter and oiler taste. Don’t need to add any oil to the paddies for sure, and they were good.

Yesterday, I decided to make up some chicken soup 🍲 for dinner, which was followed by pea soup and a small bowl of cornmeal porridge. Interested in finding new ways to use cornmeal. 🍊 Shredded a full orange in the food processor, to get all the flavor, taste and fiber of both the inside and outside of an orange. 🍞 Didn’t make up any bread last night, I was kind of tired, but I probably will tonight when I get home.

A day to remind us of October days gone by β˜€

Making a run at sixty degrees this afternoon but don’t worry the sun will be setting in the four o’clock hour so no bike ride home.

Good morning! Happy Thursday. Sunny and 31 degrees in Delmar, NY. 🌞 Calm wind. Things will start to thaw out at around 7 am. 🌑️

Kind of a cold start to the morning, ❄️ for my morning walk. I was up at 5 AM to start the pea soup πŸ₯˜ but went back to bed until around 6 AM when I went out for my walk. Oatmeal pancakes, this time experimenting with an egg in the batter, some cider vinegar and baking soda to see if I can make them more fluffy. πŸ₯ž Honestly, they were somewhat better. I should play with whole-wheat flour and a more conventional pancake recipe, though I don’t like the idea of adding sugar or oil to the mix. Plenty of sugar from the blueberries 🫐 I used in the mix.

Probably the best chance for them calling out the salters in the mountains is that Wednesday before Thanksgiving, but even I’m skeptical about that. Dinner last night was 15-bean soup πŸ₯˜ but as I didn’t have enough soup, I cut up some spinach, celery, carrots, onions and added some smoked paprika to make it a meal, dipped in with lots homemade bread, this way the loaf without the shredded carrots. πŸ₯• As much as I like my bread with the carrots 🍞 I find it really tough on my stomach and guts, so I might end up cutting that out for just whole-wheat bread with some oatmeal put in the mix. Or just only whole-wheat flour, if I want things to be fluffier. Dessert was Greek yogurt with too much canned 100% pumpkin and some pumpkin pie spice. Tasted good but I probably eat too much. I keep telling myself I need to get pie pumpkins πŸŽƒ and make my own pumpkin up at home. It would save the can ♻️ that I otherwise have to save for recycling. Rather compost then recycle, then tin cans usually still have a good market.

Last night I returned my library books πŸ“š to the library. I had a stack of books I haven’t read but I keep putting off returning them. I am spending my free time with the Udemy classes on Remote Sensing, so it’s not that I’m not learning, but it’s not with books. Most of the library books I get out are pretty out of date, and I am lazy and I just like watching video lectures, especially now that I get Udemy through my library for free. πŸ“± There are so many great online resources I’m learning I can access with my library card, physical books aren’t the only way to keep up with the world. 🌎 Plus I like being able to snuggle under my heated blanket with the phone, rather then a book. That said, I’m usually dog tired by 8 or 8:30 PM as I get up at 5 AM each day, to start cooking. πŸ‘©‍🍳
