Going whole hog

I was listening to Splendid Table on NPR this morning as I laid in the hammock, and they’re talking about whole hog barbecue. It just made me hungry even if it sounds like a ton of work, staying up all night making coals and putting them around the hog.

IMy neighbors growing up raised hogs and they’re really good for reclaiming food waste – that doesn’t burn that well as I found out last night. A bit smelly at times but thats part of country living if you plan appropriately to keep them down wind from your house. And so yummy if cooked appropriately.

I sometimes watch a lot of homesteading channels like Keeping Dutch and Arms Family Homestesd a few others and a lot of hogs. It’s just another thing you can do with your land when you live in the country. I look forward to the days when I can own my own land.
